Bulgur is actually broken wheat, in Hungary it is also called "Turkish rice" in Turkish restaurants. A side dish mostly preferred by Middle Eastern and Turkish cuisine. The still unripe or husked ripe wheat grains are steamed, dried and then coarsely crushed. Since bulgur is steamed in advance, unlike the semolina known to Hungarians, it hardly needs to be cooked, it is even enough to scald it with water. It has a lot of fiber, one cup of bulgur covers 25% of the daily requirement.
